Croquanter kit








Bought this great kit from Hector at OTB foods, Toronto (otbfoods@rogers.com). The kit comes from the Albert and Ferran Adria range of products. It has various stencil shapes and dehydrator mats. You'll need isomalt, sugar, glucose and the main ingredient (mango) to make these glass chips. For the yogurt chips you'll also need the powdered yogurt called yopol which is a Textura product. OTB has the full range of Textura products.

Colborne Lane









Last week's 15 course tasting menu at Colborne Lane in Toronto was amazing. The flavours, techniques and presentation were world class. Chef Claudio Aprile and his team executed one of the best meals I have ever had.
Here's just two of the courses.



Frozen cream bon bon filled with liquid coffee liqueur.
Miso black cod with puffed tapioca, chive cream, sesame panna cotta on crushed pistachios.
